The Italian Touch in Peruvian Cuisine:
A Delicious Legacy

Peruvian cuisine is known for its diversity, creativity, and ability to blend flavors and traditions from around the world.

Among the many cultures that have left their mark on our kitchens, Italian immigration stands out for its subtle yet lasting influence—bringing with it not only recipes but a love for good food and the joy of sharing a meal.

Italian migration to Peru began in the 19th century, with most immigrants settling in coastal cities like Lima and Callao. They brought with them their traditions, family recipes, and culinary customs rooted in simplicity, freshness, and flavor.

As they adapted to local ingredients and tastes, these traditions slowly merged with the Peruvian palate, resulting in dishes that are now fully integrated into our everyday meals.

Pasta, Sauces, and Much More

One of the clearest Italian contributions is the use of pasta, which quickly became popular across Peruvian households. Spaghetti, tagliatelle, and gnocchi are now staples in Peruvian kitchens—often prepared with a local twist.

Take for example “Tallarines Verdes”—our version of Pesto Pasta inspired by Genoese pesto. But instead of using pine nuts and Parmesan, Peruvians add spinach and fresh cheese, creating a creamy, vibrant, and uniquely Peruvian sauce.

Another classic is “Tallarines Rojos”, similar to an Italian-style Pomodoro Sauce but often paired with Peruvian stews like “Seco de carne”, showing the mix of two culinary worlds on a single plate.

Let’s not forget the beloved “Milanesa”, a thin breaded steak that arrived with Italian influence and is now a comforting favorite in Peruvian homes and menus across the country.
