Quinoa Stew


  • 1 medium red onion
  • 500 gr of quinoa
  • 200 gr of fresh cheese or cottage cheese
  • 1 tablespoon of liquefied yellow pepper
  • 1 tablespoon of huacatay paste
  • 1/2 tablespoon ground garlic
  • 3 medium potatoes
  • 3 teaspoons of salt
  • 1/2 teaspoon ground pepper
  • 1 cup of evaporated milk


Leave the quinoa soaking in a bowl with water for at least 2 hours. Then wash it well and scrub until all the foam comes out.

In the meantime, cut the onion into small squares and fry it until it turns golden, without burning it. Then add the yellow pepper and the garlic.

This dressing should be added to the quinoa with ½ liter of water and put to boil. If it dries, add ¼ teaspoon of oregano for 10 to 12 minutes.

While the quinoa and the dressing are cooked, peel the potatoes and cut them into four pieces. When you finish boiling the stew, add the potatoes and leave them cooking. Finally, add the cheese, salt and huacatay paste, and 3 minutes later add the milk.
